Artichoke Dip
Recipe
Note - I squeeze the water out of the spinach and artichoke before using them in this recipe. I also use reg mayo, and blend the jalapeno.

top layer
2 medium tomatoes, chopped
1 can olives, sliced
green onions, chopped
2 medium tomatoes, chopped
1 can olives, sliced
green onions, chopped
Directions -
Mix the layers separately. Use a large casserole dish. You can also half this recipe and make it in a brownie pan. Start by putting the bean mix on the bottom, followed by the guacamole, followed by the sour cream (this is tricky because the sour cream will want to blend with the green guacamole), sprinkle the toppings on and serve with tortilla chips. Store bean dip in fridge.

#1 Chipotle Sliders
1 bag frozen meatballs ($2 at Winco for 26 meatballs)
1 batch homemade bun dough - recipe
Chipotle mayo - recipe
Pickles
Directions -
The meatballs are already cooked, so you just have to heat them up according to the package instructions.
Make the dough for the buns. Shape the dough into tiny balls, let rise, brush with egg wash and bake. Cut the rolls in half when they've finished cooking.
Blend the chipotle mayo.
Slice the pickles and add one per slider.
Secure everything with a toothpick.
#2 Green Vinaigrette Mayo Sliders -
Salsa Verde (pg 20) Recipe
Mayo (to taste)
Homemade bun dough (see recipe link above)
Frozen meatballs (see info above)
Directions
Mix the Salsa Verde Vinaigrette with Mayo and add that to the sliders for the sauce. These sliders don't need pickles, because of the acidity that comes from the Vinaigrette.
