Cookie Recipes - 2015

Coconut Macaroons



Recipe
14oz bag unsweetened shredded coconut
1 can sweetened condensed milk
1 tsp vanilla
1 tsp almond extract
1 cup chocolate chips

Mix all ingredients together. spoon out cookie dough batter in 1-1/2 Tbsp portions on a baking sheet. Bake for 10 min or until golden brown.

Scotcharoos

 
Chex Scotcharoos 
Ingredients 
1 cup light corn syrup 
1 cup sugar 
1½ cups peanut butter 
6 cups Chex cereal 
1 cups semi sweet chocolate chips 
1 cups butterscotch chips 
¼ cup peanut butter 
½ tsp vanilla Instructions 

Combine corn syrup and sugar in a small pan over medium heat. Remove from heat as soon as it starts boiling and stir in 1½ cups of peanut butter. Pour over your 6 cups of cereal and fold together. Drop spoonfuls onto wax paper to let them set. Melt together chocolate chips, butterscotch chips, ¼ cup of peanut butter and vanilla in a microwave, stirring at 10 second intervals so that chocolate does not burn. Pour over cereal. Allow to cool completely before eating.

Strawberry Thumbprint Cookies with Lemon Drizzle

For the Lemon Drizzle
Use about a tablespoon of cream cheese, a teaspoon of lemon juice, and warm it a few seconds in the microwave. Then add enough powdered sugar to make it a drizzling consistency. If too thick, add a couple drops of water.

French Cookies

 
Recipe

1/2 c butter 
1/4 c sugar 
1 c flour 
1 1/4 c brown sugar 
1c chopped nuts or (chocolate chips) 
1 c coconut 
1/4 c flour 
2 eggs 

Cream butter. Add sugar and 1 c flour. Pat down in greased 9x13 pan. Bake 15 mins at 350 degrees. While crust is baking, mix together brown sugar, nuts (or chocolate), 1/4c flour. Add eggs and mix. When crust is baked, cover with coconut and nut (chocolate) mixture and bake for 15 mins at 350 degrees. *I made the version with chocolate chips but the nut version is good too.

Oatmeal Chocolate Chip Cookies and Swedish Farmer Cookies


Recipe

Bonnakakor (Swedish Farmer cookies)
1 cup real butter softened (do not use margarine)
½ tsp soda
¾ cup sugar
1 tbs light karo syrup
1 ¾ cup flour
½ cup coarsely chopped blanched slivered almonds
Cream butter, soda, and sugar. Add syrup. Stir in flour and almonds. Shape into two rolls and chill for 2-3 hours. Slice and bake at 325 degrees for 10-15 minutes. Watch closely so they don’t get too brown. Makes about 80 cookies.


Oatmeal Chocolate Chip Cookies
Cream together:
1 cup white sugar
1 cup brown sugar
1 cup shortening
Add:
2 eggs
1 tsp. vanilla
Blend together and add to the creamed mixture:
1 tsp baking soda
½ tsp salt
1 ½ cups flour
Then add:
3 cups oatmeal
1 12 oz. pkg chocolate chips
Bake at 350 degrees for 10-12 minutes

Cookie Recipes - 2014


Lemon Crinkle Cookies

INGREDIENTS:

1/2 cup (8 tablespoons) butter, softened

1 cup granulated sugar

1/2 teaspoon vanilla extract

1 large egg

1 teaspoon freshly grated lemon zest

1 tablespoon freshly squeezed lemon juice, from about 1/2 lemon

1/4 teaspoon salt

1/4 teaspoon baking powder

1/8 teaspoon baking soda

1 1/2 cups all-purpose flour

1/2 cup powdered sugar

DIRECTIONS:

Preheat oven to 350 degrees. Line rimmed baking sheets with silpat liners or parchment

paper, or lightly coat pans with cooking spray.

In a large bowl, cream butter and sugar until light and fluffy. Add vanilla, egg, lemon

zest and juice and mix well. Add the dry ingredients (except the powdered sugar) and

mix until just combined. Place the powdered sugar on a large plate or shallow pie dish.

Roll tablespoon-size balls of dough in the powdered sugar to coat. Place on the prepared

baking sheets, about 2 inches apart.

Bake the cookies for 9-11 minutes. The cookies will not be browned on the edges but

they will have lost a bit of their shininess on top. Don’t overbake! Cool the cookies on a

cooling rack and store in an airtight container or eat immediately.

*Makes about 2 dozen cookies

Chocolate Mint Cookies


1 box of cake mix (any kind you want. I used chocolate but my kids love the Funfetti)
2 eggs
1/3 c oil

Mix and then put small round balls onto a greased cookie sheet. Bake at 350F for 8 mins. You can add any thing you want to them. I had mint chips on top, I have also done rolos inside etc.
 

PB Snowballs


Peanut butter snowballs
1 cup powdered sugar
1/2 cup creamy peanut butter (I used jif)
3 Tbsp butter, softened (I used real butter)
1 pound white candy coating
Combine sugar powdered sugar and butter. Shape into 1" balls. Place on wax paper lined baking sheet.
Chill 30 min or until firm.
Meanwhile melt candy in microwave
Dip balls and place on wax paper to harden.
Makes 2 dozen.
I think these would also be good with brown chocolate coating. 

Peanut Butter & Chocolate Chips

1/2 cup sugar
1/2 cup brown sugar
1 egg
1/2 cup butter room temperature
1/2 cup peanut butter
*Mixed them all together*
(Separate)
After,
1/2 teaspoon of baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup and 1/4 purpose flour
1 cup semi chocolate chips
Mixed them all together,

Preheat 375
Option: roll the cough dough with sugar

Cook 10 to 12 minutes
 

Rice Crispy PB Cookies w/Butterfinger

 6 oz marshmallows
1/2 cup peanut butter
5 cups rice crispys
3 butterfingers - reg size 

Heat marshmallows in a bowl in the microwave for 1 min & 30 sec. Stir in PB, then rice crispys. Spread half of the mixture out in a brownie pan lined with plastic wrap. Add butterfingers. Spaced evenly. Top with remaining rice crispy batter. One batch makes 12 cookies.

SugarCookies

 1 cup sugar
1 cup powdered sugar
1 cup butter, softened
1 cup oil
1 teaspoon vanilla
2 eggs
4-1/2 cups all purpose flour
1 tsp baking soda
1 tsp cream of tartar
1 tsp salt

In a large bowl, cream sugar, powdered sugar and butter. Add oil, vanilla and eggs; mix well. Lightly spoon flour into measuring cup; level off. Stire dry ingredients into sugar mixture. Chill at least 2 hours or overnight. 

Heat oven to 375 degrees F. Shape dough into 1-inch balls. Place on ungreased cookie sheet. Flatten with glass dipped in sugar. Bake at 375 degrees F for 5 to 8 minutes or until set but not brown. Makes 9 to 10 dozen cookies.

Games - 2014

Game # 1
We played a game where you put a paper plate on your head and draw a tree, fireplace, stocking, etc. The person whose picture turned out the best won a prize.

Game # 2
We passed around a big ball of plastic wrap that had candy inside. One person would unwrap it while the person ahead of them in line would try to roll doubles with a pair of dice. The ball was being unwrapped too fast, so we added more dice to make it easier to get doubles.

Recipes - 2013


Rice Crispy Peanut Butter Cookies
1 cup Karo Syrup
1 cup Sugar
1 cup Peanut Butter
4 cups Rice Crispys

Mix Karo & Sugar together in a pan and bring to a boil. Remove from heat and stir in peanut butter. Add a little over 4 cups of Rice Crispys and start spooning cookie sized pieces onto parchment paper. Give the cookies 5 or so minutes to set.

Fudge Filled Squares


Peanut Butter Goodness
Peanut Butter Cup Cookies
1 package of PB cookie mix
1 Tb water
1 egg
1/4 c veg oil
24 PB cups

Preheat oven to 375F. In a bowl sir together water, egg and oil til blended well. Add cookie mix and then stir until dough forms. Shape dough into 24 balls and place in paper-lined mini muffin pan. Bake 8-10 mins. Immediately press PB cups into cook after they are pulled out of the oven. Cool before removing from pan.
